Help out a Hamburger

You can help “hamburger” meat stick together (particularly in less greasy meats such as venison) by adding in a little oatmeal to the meat. I also kneaded in some sliced and diced onions, along with some seasonings, and it added some great flavor when the burger was cooked. I used ~ 1/2 cup oatmeal to 1 lb. ground meat. We were really excited to be able to use some lettuce fresh from our garden to make it one delicious burger!



Here’s a really yummy Hamburger dress-up: Add chopped onion, bacon bits (homemade or pre-packaged, but make sure its real, not the hard, fake stuff!), Worcestershire sauce (around 1-1 1/2 TB) and Montreal Steak seasoning (1 Ts or more if you like) (and I use dry bread crumbs to help it stick together)….really yummy and very moist!
By Brother-in-law got an elk this winter. So they brought ground elk. I mixed it with our ground sirloin and an egg (not quiet as healthy as your version), salt, pepper and seasoning salt. Those were good burgers. We used garden gown tomatoes and some fresh avacodo…mmm.
i couldn’t remember the whole recipe from cherith so i’ve been adding worcest. sauce, chopped onion, bacon bits and ground pepper and we have really enjoyed them! i’m sure they’re even better w/ the rest of the ingredients.

If cooking venision, we have a dish we love, we just can’t get the venison anymore.
Cut venison in bite size pieces, saute in a little oil.
Add some garlic, and capers, salt and pepper.
Cook this till meat is mostly tender. Add some red wine, (the alcohol will burn off) a little Rosemary, and then thicken with a little flour and water. I really like cornstarch and water, gives the gravy a nice shine.
You can pour this over spaghetti, or rice, But if yo have spaghetti, a nice hunk of Italian bread to soak up the juices. Just another tidbit
