Baked Pancakes

Here’s a fun variation to the normal pancake flipping–bake them! It’s great if you want to cut down on preparation time or want to serve them all fresh out of the oven. It makes a great Sunday morning breakfast. (Or just any time…like this morning! :) )

Just mix up batter for 8-10 pancakes (using a mix or homemade batter), pour into a casserole dish (pictured with a 2 quart dish), and bake at 425 degrees for 15 to 20 minutes.

And, oila, you have “pancake casserole!”

The time and temperature may vary a bit, but this is what I experimented with, and what worked for me. We love berries in our pancakes, and we like them thick with grains–so that’s what I did here, too.

  2. I do this too. I do it in a jellyroll type pan though so they are not as thick. It works great to bake pancakes when you are in a hurry. Thanks for sharing.

  6. This is so smart, we will try this! Flipping pancakes for a crowd takes a long time and I serve pancakes for dinner a couple times a month!

  8. I’ve been doing this for a while in my bar pan. (It’s a jelly roll pan size.) The kids love to cut out whatever shape they want with a cookie cutter once they are baked, and then mommy and daddy eat the “scraps.” I do 375 for 17-20 min. but that’s for stoneware. So much faster than pouring and flipping (and burning when you get impatient at the end and turn the heat up.) This also works for “grilled” cheese on stoneware.

  18. I have thought for all the time that pancake is a tiny flat piece of roasted greasy dough, called in my native language as “bleen”. I was wrong.
