Creative Uses for Leftovers: Mustgo Soup

My husband vividly recalls his mother making Mustgo soup during his childhood. When he told me the name (only hearing the title–not seeing the spelling), I thought it sounded like an interesting type of food–maybe like “minestrone soup?” After all, he was born in Korea (missionary family)…

Then I realized that I too made “must go” soup! We love soups and Wednesdays have been designated as our “soup night.” I usually use a chicken or beef bullion for the base, adding rice and/or pasta of some sort, some veggies, and whatever in our fridge “must go.” This is a great way to use up leftovers, and it is easy to customize your soup however you like it.

Here are just a few of the variations we’ve enjoyed:

1. Taco Soup (using leftover meat, salsa, etc…, add taco seasoning and enjoy with sour cream, cheese)

2. Vegetable Soup (throw in all your leftover veggies plus some lentils, pasta)

3. Chicken Noodle Soup

4. Anything and Wild Rice Soup

5. Pizza Soup

And the list could go on and on. This is a great inexpensive way to extend the life of your leftovers and to save a little by using this as a “filler meal.”  Plus, it is a quick and easy meal that doesn’t take much effort–and who doesn’t love that!

    Ha ha! That’s great. I love “Anything and Wild Rice Soup” Yum. I make “Leftover Soup” but I’m gonna start making “Mustgo”!

    That is pretty funny because my pops used to just pull everything left over out of the fridge and make a mega soup out of it. Sometimes it was not so good and sometimes it was really good. Even on the not so good soups, they were eatable and was really ok.

    “Kitchen Sink” soup, as in everything but….
    It really is a great way to use up leftovers. I use my slowcooker for making broth, and add stuff to that. Usually a weekend thing.
